Today I want to share the recipe of one of my favorite dishes with you: Baba ziemniaczana, the Polish potato cake or short Potato babka. I guess we cook the potato babka once a month at least. Usually at weekends and having friends for dinner then.
The Baba ziemniaczana is considered as a traditional dish of Mazuria. Characteristic for the Baba ziemniaczana are the crunchy outer, the intensive scent of baked potatoes and bacon, and the soft, slightly sticky inner. The Polish potato cake is perfect for being eaten either hot or cold. Cut into slices the Polish potato cake can be combined with various toppings such as spicy salads like coleslaw, sauerkraut or with a herb yogurt sauce or mushroom sauce. As a drink a spicy beer or a strong dry white wine are perfect.
It is delicious served right away. But the Polish potato cake gets even better on the second day, when the flavors could sit overnight. Put the slices in a pan and heat once again. Delicious!
Although the Polish potato cake needs only four ingredients, its preparation needs a little time. In particular, the grating of raw potatoes can be challenging because we need a as fine as possible, pulpy potato batter. Actually potato mud.
Ideally, you have a meat grinder or something similar in your kitchen, which undertakes the most of grating the potatoes to potato batter.
So, here is the recipe of my wife now, who cooks the Polish Potato Cake just like her mother and her grandmother already did.
Polish Potato Cake – Baba ziemniaczana
- 3 kilograms of potatoes
- 500 grams of bacon
- 500 grams of onions
- 300 grams of flour
- Peel and wash the potatoes.
- Finely dice the bacon and the onions.
- Render the bacon slowly and fry slightly cross.
- Grate the raw potatoes to a pulp.
- Add the onions to the bacon and fry until golden brown.
- Remove the onions and the bacon from the pan. Allow the fat to drain through a colander.
- Give the onions and bacon in the potatoe batter and mix all.
- Add the flour and mix well again. Season with salt and pepper.
- Bake in the stove for about 90 minutes.
